1 Loaf of crusty bread or thin baguette cut for sandwiches 1-3 lb pork tenderloin ( overnight cook mine in crockpot, with whatever spices I choose, usually spicy). You can even use thick cut deli pork in a pinch! 3-5 TBS Mayo 1 cup sliced thin cukes 1 cup shredded carrots 8-10 Daikon radish julienned 1/2 C. sliced thin onions( whatever kind you prefer) 1/2 cup cilantro 1-2 sliced jalapenos Spicy Sauce ingredients: 2-3 tsp soy sauce 4-8 garlic cloves 1Tbs coconut sugar or brown sugar is fine 1tsp fish sauce 1/2 cup garlic flavored rice wine vinegar 2 tsp Siracha sauce dash of salt and pepper Sauce ingredients for pickled veggies: 3/4 C. Rice wine vinegar 1TBS coconut sugar 2 tsp kosher salt Mix all sauce ingredients and let sit, do the same with the pickling ingredients and add the carrots, onions, and radish. Slice bread, add mayo to one side, and spicy sauce to the other . Layer the sliced cukes, then the pork, add pickled veggies,add cilantro, jalapenos, and more spicy sauce if desired. Voila! Enjoy)
